Gretchen loves to cook. Here are some recipes for some of her favorite dishes.

Bleeding Heart Martini

2 ounces dry vermouth
8 ounces premium gin
   ice cubes
4 pickled baby beets, each placed on a cocktail skewer

Heart in Mole

2 tbsp olive oil
1 onion, chopped
1 clove garlic, minced
1 stalk celery, sliced
1 carrot, cubed
1 slice bacon, sliced into small strips
2 lbs heart, rinsed and cubed
2 tsp beef bouillon granules
1 tsp ground cumin
1/2 cup red wine
3 cups water, or as needed
1/4 cup prepared mole sauce
1 parsnip, cubed (optional)
2 large potatoes, peeled and cut into large chunks
1 cup canned lima beans

Heart Chop Suey

2 lbs heart, rinsed and cut into thin strips
1/4 cup all-purpose flour
1/4 cup butter
4 onions, peeled and thinly sliced
1 stalk celery, diced
2 cups beef broth
1/2 cup water
salt and pepper to taste
1 tbsp Worcestershire sauce, or to taste

Heart Chili

1 lb finely ground heart (other ground organs will do, but not as good)
1 tsp paprika
1 medium onion, chopped
salt and pepper
water
1 tsp cumin
1 tsp chili powder
garlic powder
cayenne pepper

Hot German Sweet n Sour Heart

1 large heart
1 tsp salt
1 whole onion
1 bay leaf
1 rib celery (optional)
2 tbsp butter
2 tbsp flour
1 tbsp sugar
1 tbsp vinegar

Grilled Heart

Works great as an appetizer!

2-3 lbs hearts
equal parts soy sauce and sherry wine
2 cloves garlic, crushed
1 tsp freshly ground black pepper
1 tsp ground ginger

Pickled Heart

1 heart
4 quarts water
2 tsp salt
1/4 tsp poppy seeds
1/4 tsp celery seeds
1/4 tsp black peppercorns
1 clove garlic, crushed
1 tsp thyme
1/2 tsp marjoram
1 bay leaf
1 bottle chianti
   horseradish
   Jewish pumpernickel

Stuffed Heart

1 large heart
Salt and ground black pepper to taste
2 cups bread or cracker crumbs (seasoned, optional)
1/4 pound pork sausage
1/4 cup minced onion
1/2 cup all-purpose flour
4 tbsp vegetable oil, divided use
1/8 tsp ground black pepper
1/2 tsp sage
1 tbsp minced parsley
2 cups water
1 tsp beef base
